Who knew you could freeze meringue? Well, here's the perfect recipe for it. Crisp white meringue is topped with a lemon cream, then fresh berries to make the perfect dessert to serve at your next get-together.

  • Heat oven to 225ºF.
  • Beat egg whites, cream of tartar and salt in medium bowl with mixer on high speed until soft peaks form. Add sugar, 1 Tbsp. at a time, beating constantly until stiff peaks form. Blend in vanilla. Spread into 10-inch circle on parchment-covered baking sheet, indenting centre slightly.
  • Bake 1-1/2 hours; cool.
  • Beat cream cheese, lemon zest and juice until blended. Add dry pudding mix and milk, beat 2 min. Spoon into centre of meringue. Freeze 3 hours or until firm.
  • Remove dessert from freezer 15 min. before serving. Transfer to serving plate; top with combined berries.

Substitute

Prepare using Jell-O Vanilla Instant Pudding.

Variation
