  • HEAT oven to 350°F (180°C).
  • REMOVE crusts from bread. Cut in half diagonally. Arrange 10 triangles around sides of greased 10 inch (25 cm) pie plate or quiche dish.
  • SPREAD 4 triangles with jam. Place in bottom of pie plate. Layer 4 more triangles and half the fruit. Repeat layers.
  • CUT remaining triangles in half. Arrange in centre.
  • BEAT eggs with milk, sugar and lemon rind. Pour over bread.
  • BAKE 30 - 35 minutes.
