  • Melt margarine in large skillet on medium heat. Add vegetables; cook and stir 3 to 5 min. or until softened. Stir in seasonings. Remove from heat.
  • Place crackers in 2-L casserole dish sprayed with cooking spray; cover with vegetable mixture. Whisk eggs and milk until blended; stir in cheese. Pour over vegetable mixture. Refrigerate several hours.
  • Heat oven to 325°F. Bake casserole 45 to 50 min. or until knife inserted in centre comes out clean.
