  • Reserve 2 Tbsp. sugar; mix remaining sugar with next 7 ingredients in large bowl. Whisk egg, 1 cup milk and oil until blended. Add to dry ingredients; stir just until moistened.
  • Heat griddle or large skillet sprayed with cooking spray on medium heat. Pour batter onto griddle, using 1/4 cup batter for each pancake. Cook until bubbles form on tops, then turn to brown other sides.
  • Meanwhile, whisk custard powder, reserved sugar and remaining milk in microwaveable bowl until blended. Microwave on HIGH 4 to 5 min. or until mixture comes to boil, stirring after each minute.
  • Serve pancakes with warm custard sauce.

Special Extra

Serve pancakes on a festive platter garnished with fresh cranberries and mint leaves.
