  • Cook beets in boiling water in large saucepan 30 min. or until tender; drain. Cool 15 min.
  • Peel beets; cut into thin slices. Mix vinaigrette and 1 tsp. dill until blended. Reserve half the vinaigrette mixture for later use; pour remaining vinaigrette mixture over beets. Let stand 30 min. to marinate, turning beets after 15 min.
  • Cover platter with lettuce; drizzle with reserved vinaigrette mixture. Drain beets; discard marinade. Place beets on lettuce; sprinkle with remaining dill.


Prepare using red beets or a combination of different coloured beets.

Special Extra

Garnish with 1 Tbsp. chopped toasted walnuts or pecans along with the remaining dill before serving. For added interest, garnish with larger dill pieces instead of chopped dill.

How to Peel Beets

Gently rub cooled beets with clean cloth or paper towel to remove the peels.
