Prepare using red beets or a combination of different coloured beets.
Garnish with 1 Tbsp. chopped toasted walnuts or pecans along with the remaining dill before serving. For added interest, garnish with larger dill pieces instead of chopped dill.
Gently rub cooled beets with clean cloth or paper towel to remove the peels.
