  • Place quinoa in fine-mesh sieve; rinse well under cold running water. Place quinoa in medium saucepan. Add 2/3 cup water; stir. Cover. Bring to boil; simmer on medium-low heat 10 to 15 min. or until quinoa is tender and water is completely absorbed. Spoon into large bowl; cool 10 min.
  • Heat oven to 350ºF. Reserve 1/2 cup ketchup for later use. Add remaining ketchup and all remaining ingredients to quinoa; mix just until blended. Shape into 6x4-inch loaf on foil-covered rimmed baking sheet.
  • Bake 40 min. or until done (165ºF), spreading with reserved ketchup after 30 min.

Serving Suggestion

Serve with sides of hot cooked potatoes and peas, with extra ketchup on the side.


Substitute extra-lean ground beef for the turkey.

Quinoa needs to be rinsed before cooking to remove the bitter coating called saponin. When cooking the quinoa, plan ahead by cooking extra, then cooling and freezing the extra quinoa to have on hand for another use.
