  • Heat 1 Tbsp. dressing in large nonstick skillet on medium-high heat. Add chicken; cook 3 to 4 min. on each side or until done (170ºF) and golden brown on both sides. Transfer chicken to plate; cover to keep warm. Carefully wipe skillet clean with paper towel.
  • Grate 2 tsp. zest from lemon; mix with remaining dressing. Cut lemon into 4 slices; set aside. Heat remaining dressing in large skillet on medium-high heat. Add shallots; cook and stir 2 to 3 min. or until crisp-tender. Add all the peas; cook and stir 1 to 2 min. or until crisp-tender. Stir in cheese and half the mint.
  • Top pea mixture with chicken and any chicken juices. Serve garnished with remaining mint and lemon slices.

Variation

Prepare using Kraft Extra Virgin Olive Oil Greek Feta Dressing and/or substituting fresh dill for the mint.
