  • Spray barbecue with cooking spray; heat to medium-high heat. Add pepper halves and chicken to barbecue. Grill pepper, turning occasionally, until tender and slightly blackened, about 12 min. Grill chicken for 6 to 8 min. on each side or until done (165°F). Brush chicken with 1 Tbsp. dressing in last 2 minutes.
  • Remove peppers from barbecue and slice lengthwise into 1/2-inch strips. Add remaining dressing; toss to combine. Serve chicken topped with roasted peppers.

Special Extra

To bump up the flavour, try adding fresh basil.
