  • Heat greased waffle iron.
  • Heat small skillet sprayed with cooking spray on medium heat. Add egg; cook 3 to 4 min. or until white is set and yolk is cooked to desired doneness.
  • Fill bread slices with spinach, tomatoes, bacon and egg. Drizzle with dressing.
  • Add to waffle iron; close lid. Cook 3 to 4 min. or until golden brown.

Substitute

Prepare using your favourite bread, or whatever bread you have on hand.

Substitute 30 g sliced deli ham for the bacon.

Variation

This delicious sandwich can be cooked in a skillet instead. Heat nonstick skillet on medium heat. Add sandwich; cook 2 to 3 min. each side or until sandwich is golden brown on both sides.
