I've made this many times now and find it to be a wonderful change from the ordinary Pork Roast. The Salsa is a nice way to spice up the meal. Served with Couscous and Kayla's Crunchy green beans...excellent combination.
WONDERFUL!! I have served the roast 3 times, and all 3 times I have recieved great reviews from quests. My only suggestion is not to put to much cilantro in. I accidently put a little too much last time, deffinitly a spice you want to use in moderation. Yummy!! Serving it tonight
We made this for a dinner party lastnight. I would say that it was average. I don't think that I will make it again soon. I was wondering if there was another herb that could be used in the salsa recipe other than Corriander? I really didn't like the taste of it. Our guests didn't really say much about the meat, so from past experience I would say that it wasn't a real hit recipe.
