Use a sharp knife to cut the tough fibrous piece of connective tissue from the meat before sprinkling with the taco seasoning mix and grilling as directed.
Before using the baking sheet as directed, cover it with additional sheet of foil. Use the prepared baking sheet to carry the pork, peaches and foil packet out to the barbecue. After transferring the pork, peaches and foil packet to barbecue grate, discard the foil from the baking sheet. Once the pork, peaches and rice are cooked, use the clean uncovered baking sheet to carry the pork, peaches and rice back inside to serve.
