Substitute 1 cup drained jarred roasted red peppers for the grilled roasted yellow pepper pieces.
You can use the trimmed baguette ends and removed bread to make fresh bread crumbs. Just process in food processor until fine crumbs form. Freeze in resealable plastic bag until ready to use as desired.
