  • Heat barbecue to medium-high heat.
  • Toss vegetables with 1 Tbsp. dressing; place in grill basket. Grill 5 min. Meanwhile, toss shrimp with 1 Tbsp. of the remaining dressing.
  • Spoon vegetables to one side of grill basket. Add shrimp to other side. Grill 4 to 5 min. or until shrimp turn pink.
  • Spoon vegetables into medium bowl. Add quinoa and remaining dressing; mix lightly. Top with shrimp and cilantro.

How to Cook the Quinoa

To make the 2-2/3 cups cooked quinoa needed to prepare this tasty recipe, bring 1 cup water and 1/2 cup uncooked quinoa to boil in saucepan on high heat. Simmer on medium-low heat 15 min. or until quinoa is tender and liquid is absorbed. Fluff with a fork.


Substitute Italian parsley for the cilantro.
