Serve with a side of spicy black beans.
When grilling steaks, make sure the barbecue is hot before adding the meat. A hot barbecue sears the steaks, sealing the outsides of the steaks so the insides stay moist and juicy. Keep the temperature of the barbecue as even as possible. Since the centre of the barbecue tends to be hotter, place thicker cuts of steaks near the centre of the grate and thinner cuts toward the outer edges.
Use tongs to turn steaks on the barbecue when the bottoms are well browned. Piercing with a fork will cause the juices to run out, resulting in less juicy steaks.
