  • Heat barbecue to medium-high heat.
  • Cut thin slice off top of each tomato; reserve tops. Scoop out centres, leaving 1/2-inch-thick shells. Place removed pulp in large skillet.
  • Stir dressing into pulp; cook on high heat 2 min. or until mixture is reduced by half. Add spinach and corn; cook and stir 2 min. or until corn is crisp-tender. Spoon into tomato shells; top with cream cheese product.
  • Spray barbecue grate with cooking spray. Grill tomatoes and reserved tops 3 to 5 min. or until heated through.
  • Serve stuffed tomatoes with the tops.

Substitute

Prepare using frozen corn.

Fresh ears of corn should have bright green, snugly fitting husks and golden brown silk. For best results, cook the corn the same day you purchase it.

Note

One medium ear of corn will yield the 1 cup corn kernels needed to prepare this delicious recipe.
