Substitute 1 Tbsp. chopped jalapeño peppers for the crushed red pepper. Add to egg mixture along with the flour mixture.
These savoury muffins freeze well. Cool completely, then place in resealable freezer-weight plastic bag. Freeze up to 3 months. When ready to serve, thaw muffins at room temperature, then microwave on microwaveable plate on MEDIUM 45 sec. or just until muffins are warmed.
