  • Heat oven to 350ºF.
  • Heat oil in small skillet on medium-high heat. Add vegetables; cook 5 min. or until softened, stirring occasionally. Remove from heat. Stir in ketchup. Cool 15 min.
  • Mix meat, bread crumbs, egg and half the vegetable mixture just until blended; press into 9x5-inch loaf pan sprayed with cooking spray. Refrigerate remaining vegetable mixture until ready to use.
  • Bake meatloaf 1 hour or until done (160ºF). Let stand 5 min. Meanwhile, reheat remaining vegetable mixture in saucepan on medium heat 3 min. or until heated through, stirring frequently.
  • Top meatloaf with vegetable mixture before serving.

Serving Suggestion

Serve with hot mashed potatoes and your favourite cooked fresh vegetables.
