Use a variety of different coloured and shaped tomatoes when making this seasonal salad. Just chop, quarter or halve the tomatoes depending on their size.
Salad can be made ahead of time. Prepare as directed, but do not add cheese. Refrigerate up to 8 hours. Toss with cheese just before serving.
The tomatoes in this delicious salad provide a source of both vitamins A and C.
