  • HEAT cider and herbs to boiling in a medium saucepan. Set aside to steep for 5 minutes.
  • ADD sugar and vinegar.
  • STIR over medium high heat. Bring to a full rolling boil and boil hard 1 minute, stirring constantly. Remove from heat.
  • IMMEDIATELY stir in liquid fruit pectin.
  • LET stand 5 minutes, stirring constantly to distribute herbs.
  • POUR quickly into warm, sterilized jars filling up to 1/4-inch from rim.
  • SEAL while hot with sterilized 2-piece lids with new centres.

    This recipe tastes ok, but the proportions are all wrong. It only uses 11/4 cups of liquid to one pouch of pectin. It only makes two 250ml jars of jelly. Compare that to the apple jelly recipe that uses 5 cups of liquid to 1 pouch of pectin and makes eight 250ml jars. I was thinking of using it as a favour at my daughter's wedding, but the low yield makes it too expensive!

    Taste is awesome .....great glaze for chicken, pork and could possibly be used with fish...will be glazine my Thanksgiving chicken with this jelly....Glad I tried it.
