  • Heat oven to 375ºF.
  • Place roast in roasting pan sprayed with cooking spray; sprinkle with black pepper. Place vegetables in pan around roast; cover.
  • Bake 1 hour. Meanwhile, combine all remaining ingredients except beans and red peppers.
  • Reserve half the syrup mixture; brush remaining syrup mixture onto roast. Bake, uncovered, 1 hour, brushing occasionally with some of the reserved syrup mixture.
  • Spoon beans over vegetables in pan; sprinkle with red peppers. Bake 20 to 30 min. or until roast is done (160ºF), brushing occasionally with remaining syrup mixture.
  • Remove pan from oven. Let stand 10 min. before slicing the roast and serving with the vegetable mixture.

Substitute

Substitute chopped butternut squash for the rutabaga slices.

Serving Suggestion

Garnish with fresh parsley sprigs before serving.
