  • Combine chili sauce, vegetables, garlic and cumin. Cut 2-1/2-inch piece out of centre of each bagel half. Discard or reserve removed pieces for another use.
  • Heat oil in large skillet on medium heat. Place bagel halves, cut sides down, in skillet. Slip cracked egg into centre of each bagel half; cover. Cook 5 to 7 min. or until whites are set and yolks are cooked to desired doneness.
  • Top eggs with chili sauce mixture and cheese. Remove from heat. Let stand, covered, 1 min. or until cheese is melted.

Special Extra

Serve with refried beans and chopped avocados.

How to Use the Removed Bagel Pieces

Place removed bagel pieces in blender; blend until desired crumb size. Freeze until ready to mix with melted butter and use as a topping for your favourite casserole recipe.
