Brownies and ice cream are a match made in heaven! A wonderful example of this match is our recipe for Ice Cream Brownie Bowls with Peanut-Chocolate Sauce. The brownie cups hold the ice cream while it melts. And the soft flowing peanut butter-chocolate sauce turns into a delicious cage on contact with the cold ice cream.

  • Heat oven to 350ºF.
  • Prepare brownie batter as directed on package; spoon into 12 muffin pan cups sprayed with cooking spray. Spray bottom of second 12-cup muffin pan with cooking spray; stack on top of batter-filled pan, pressing bottoms of sprayed cups gently into batter in bottom pan.
  • Bake 30 min. Do not remove top pan. Cool completely.
  • Lift top muffin pan off brownie cups. Run knife around brownie cups to loosen from pan; carefully remove brownie cups from pan. Microwave peanut butter and chocolate in microwaveable bowl on HIGH 1 min. or until completely melted, stirring every 20 sec.
  • Place brownie cups on dessert plates; fill with scoops of ice cream. Drizzle with peanut butter sauce; top with sprinkles.

Microwave the peanut butter sauce just before drizzling it over the filled brownie cups. If it cools off, microwave it in 15-sec. increments just until warmed to desired drizzling consistency.

Prepare using your favourite flavour of ice cream, such as chocolate or banana.

Special Extra

Sprinkle with toasted flaked coconut before serving.
