Remember these food safety tips when purchasing fresh chicken. First, put fresh chicken into your grocery cart just before checking out of the store. Make sure the chicken is very cold to the touch and the package is not torn or leaking. Place chicken package inside a plastic bag before placing in the grocery cart to keep any juices from touching other food items. At home, immediately refrigerate chicken and use within 2 days. Or, overwrap with heavy-duty aluminum foil or freezer paper and freeze for up to 6 months.

This was quite tasty and easy to make. I made the red peppers a bit larger and easier for the kids to 'pick out'.
I would probably even add fresh basil if you have it on hand.
Great for our family who is always on the go.
