I had to make a dessert for for a friend with swallow problems and it was a hit. Instead of boring pudding she thought it was much like a real baked cheescake.
serves 9 easily. I used the 85 gm pkg of regular lemon jellow and it was delicious. I also used a generous (4 tbs or more) sprinkling of graham crumbs and would use even more next time.
I have made this a couple times now, changing the flavour according to whatever flavour of Jell-O I had on hand. Not as heavy as the traditional cheesecake and super-easy to make.
