Since raw kale is tough, it is important to tenderize it before using. After removing and discarding the stems, you can toss the leaves with your favourite salad dressing and let them stand for 15 min. to soften (as directed in this delicious salad). Or, you can cut the leaves into thin shreds, or massage the uncut leaves with your hands, to tenderize them before using as desired.
This easy-to-make salad can be prepared in advance. Refrigerate up to 24 hours before serving.
