I made this recipe with brown rice instead of white. The only thing is I actually had to leave it on the stove cooking for a few minutes and then took it off the heat and let it stand for a 10 minutes. We really enjoyed it!
I omitted the rice and water on this and I served it in tortilla shells. This reminded me of a fajita.
This is a great way to clean out the fridge too! I've used a left-over pork chop, a left over chicken breast and a small steak with this recipe, and everyone enjoys it. It's an adaptable recipe...always a favourite here!
