  • MICROWAVE potatoes until tender. Cut in half lenghtwise; scoop out centres, leaving 1/4 in. (0.5 cm) shell.
  • MASH potatoes with dressing, cheese and green onions. Fill potato shells with potato mixture. Top with mixture of red and green peppers, green onions and cilantro.
  • SPRINKLE with additional cheese. Bake at 375°F (190°C) for 15 minutes or until heated through.
