  • Heat oven to 400ºF.
  • Microwave potatoes and water in microwaveable bowl on HIGH 5 to 7 min. or just until potatoes are tender; drain.
  • Heat 2 Tbsp. dressing in medium nonstick skillet on medium-high heat. Add potatoes and leeks; cook 5 min. or until leeks are tender and potatoes are lightly browned, stirring frequently. Stir in bacon.
  • Whisk eggs and remaining dressing in medium bowl until blended. Stir in cheese. Pour over potato mixture. (Do not stir.)
  • Bake 10 min. or until knife inserted in centre comes out clean.


Substitute 3 green onions for the leek.


Prepare using sweet potatoes.


Substitute 1/4 cup chopped ham for the bacon.
