These Lemon-Coconut Bars have a wonderful tangy lemon flavour combined with coconut. This dessert recipe is a great treat to serve with afternoon tea or as part of a Springtime brunch.

  • Heat oven to 350°F.
  • Combine flour and icing sugar in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Press onto bottom of 13x9-inch pan sprayed with cooking spray. Bake 15 min.
  • Meanwhile, whisk eggs, lemon juice, granulated sugar, dry pudding mix and baking powder in separate bowl until blended.
  • Sprinkle coconut over warm crust; cover with egg mixture.
  • Bake 20 to 25 min. or until golden brown. Cool completely. Refrigerate 2 hours before cutting to serve.

How to Easily Cut Dessert into Bars

For easy removal of the dessert from the pan before cutting into bars, line the empty pan with foil or parchment, with ends of foil extending over sides. Use to bake dessert, then cool and refrigerate as directed. Use foil handles to remove dessert from pan before cutting into bars to serve.
