  • Bring large pot of water to boil. Add fava beans and peas; cook 2 min. Remove beans and peas with a slotted spoon; plunge into ice water. Drain; set aside.
  • Cook pasta according to package directions, omitting salt. Drain, reserving 1 cup pasta water. Mix together pasta water, ricotta, Parmesan, pepper and mint in medium bowl.
  • Toss together pasta, beans, peas and ricotta mixture until blended.

Special Extra

Garnish with additional mint sprigs if desired.


Replace ricotta cheese with 1 tub (250 g) Philadelphia Cream Cheese Product.
