  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat oil in large nonstick skillet on medium heat. Add onions; cook 3 to 5 min. or until softened, stirring frequently. Stir in spinach; cook 2 min. or just until wilted, stirring frequently. Add pasta sauce and peppers; simmer on medium-low heat 3 to 5 min. or until heated through, stirring occasionally.
  • Drain pasta; place in large bowl. Add pasta sauce mixture; mix lightly. Top with cheese and chives.

Substitute

Substitute baby arugula for the spinach.

Note

This is a great way to use leftover grilled peppers. Or if you don't have any leftover grilled peppers, you can use 1 chopped drained jarred roasted red pepper instead.
