  • Cook spaghetti as directed on package.
  • Meanwhile, remove lobster meat from shells; pound shells into small pieces with meat mallet. Place in medium saucepan; set aside. Cut lobster meat into 1-inch pieces.
  • Add seafood broth and wine to chopped shells; bring to boil. Reduce heat to medium; simmer 8 to 10 min. or until liquid is reduced to 1 cup (250 mL). Strain to remove shells.
  • Process red peppers, nuts, olive oil and paprika in food processor or blender until smooth; set aside.
  • Melt butter in large skillet on medium heat. Add shallots, garlic and thyme; cook and stir 2 to 3 min. or until shallots and garlic are softened. Stir in strained broth; bring to boil. Simmer on medium-low heat 3 to 5 min. or until liquid is slightly reduced. Add pasta sauce, spinach and lobster meat; stir. Bring to boil on medium-high heat. Simmer on medium-low heat 3 to 5 min. or until lobster meat is opaque and sauce is slightly thickened.
  • Drain spaghetti. Add to sauce in skillet along with the salt and pepper; toss to evenly coat spaghetti with sauce.
  • Spoon half the sauce onto each of 2 serving plates; swipe with back of spoon. Top with spaghetti mixture, Parmesan and chives.

Substitute

Substitute fish stock, clam juice or chicken broth for the seafood broth.

Shortcut

To save time, prepare recipe using cooked lobster tails. Just add the chopped cooked lobster meat to the sauce for the last few minutes of the sauce cooking time to heat it up.
