  • Cook chicken in hot oil in large frying pan on medium heat until chicken is cooked through, turning chicken over and adding onion to the pan after 8 minutes.
  • Add rice, peaches with their juices, chutney and curry powder; mix well.
  • Bring to boil; cover. Remove from heat. Let stand 5 min.

Spice It Up

For a stronger curry flavour use medium or hot curry powder. Add 1/2 tsp. ground cumin, ginger or coriander for a more authentic flavour.
