  • Mix spices in pie plate. Add chicken; turn to coat both sides of each breast.
  • Heat oil in large skillet on medium-high heat. Add chicken; cook 6 to 7 min. on each side or until done (170ºF). Meanwhile, prepare couscous following package directions omitting salt and oil. Combine remaining ingredients.
  • Remove chicken from skillet; place on top of couscous on platter. Cover to keep warm. Add mango mixture to skillet; cook 1 min. or until heated through, stirring occasionally. Spoon over chicken.

Serving Suggestion

Serve with steamed fresh green beans.

    Great - may want to use a bit more of the salad dressing with the mango if you want a sauce on the couscous (or rice in my case), but it was still delicious!

    I halved this recipe as I was only making it for two. I made a couple of changes as I didn't have the Mandarin Orange dressing I used the juice from a fresh orange and a little salad oil. I had Wild Forest Mushroom Couscous on hand so I used it. It was delish.
