  • Melt butter with oil in large saucepan on medium heat. Add onions, carrots, celery, garlic and thyme; stir. Cook 5 min. or until vegetables are softened, stirring occasionally. Sprinkle with flour; cook and stir 1 min.
  • Mix tomato juice, clam juice, milk and ketchup until blended. Gradually add to vegetable mixture, mixing well after each addition. Add potatoes; stir. Bring to boil; simmer on medium-low heat 30 min., stirring frequently. Add clams; cook 3 min., stirring occasionally. Remove from heat.
  • Sprinkle with parsley.

Substitute

Substitute 1/2 lb. (225 g) uncooked bay scallops or uncooked deveined peeled medium shrimp for the clams.

Special Extra

Prepare using Heinz Hot & Spicy Ketchup.
