  • Cook manicotti according to package directions.
  • Brown ground beef with onion and garlic in a large frypan over medium-high heat. Drain off fat. Stir in crumbs, carrot, parsley, eggs, and 1/2 cup of Parmesan cheese. Season to taste.
  • Spread 1/2 cup pasta sauce over bottom of 13x9x2-inch baking pan. Fill manicotti with meat mixture. Arrange in a single layer and cover with remaining sauce. Sprinkle with remaining Parmesan cheese.
  • Bake at 350°F for 35 to 40 minutes or until tender.
