  • Heat barbecue to medium-high heat.
  • Place asparagus in 8 stacks of 3 spears each; top with peppers. Tightly wrap 1 prosciutto slice around each bundle; secure with wooden toothpick.
  • Mix barbecue sauce, butter, lemon zest and juice until blended. Brush half the barbecue sauce mixture evenly onto bundles; sprinkle with cracked peppercorns.
  • Grill 2 min.; turn. Brush with remaining barbecue sauce mixture. Grill 2 min. or until prosciutto is crisp, turning occasionally. Remove and discard toothpicks before serving.

Special Extra

Garnish with additional lemon zest before serving.


Prepare using thin deli Black Forest ham slices.

How to Blanch the Asparagus

Add asparagus to pan of boiling water; cook 2 to 3 min. or until asparagus is bright green in colour. Drain. Immediately plunge asparagus into bowl of ice water to stop the cooking. When completely cool, drain asparagus then pat dry.
