Mussels are both inexpensive and quick to cook. Delicious as either a main course or appetizer, these tasty mussels need only some crusty bread to dip into the flavourful sauce.

  • Heat oil in large deep skillet on medium heat. Add onions, red peppers, garlic and half the oregano; cook 3 min., stirring frequently. Stir in tomato juice, wine and chicken broth; bring to boil.
  • Discard any mussels with cracked or broken shells. Add remaining mussels to skillet; cover. Cook 5 to 8 min. or until mussels open. Transfer mussels to serving bowl, reserving tomato juice mixture in skillet. Remove and discard any unopened shells. Cover mussels in bowl to keep warm.
  • Add remaining oregano to tomato juice mixture; stir. Simmer on medium-low heat 5 min. or until slightly thickened, stirring occasionally. Spoon over mussels; sprinkle with parsley.


Serve mussels with bowls on the side to put the empty shells in.

Serving Suggestion

Serve mussels and sauce over hot cooked linguine or fettuccine.
