  • Heat barbecue to medium heat.
  • Place chicken, breast side down, on cutting board with legs toward you. Use kitchen shears to cut along each side of backbone; remove and discard bone. Open up chicken like a book; turn over. Press firmly between breasts to flatten; tuck wings under chicken. Place chicken, skin side up, on barbecue grate.
  • Mix remaining ingredients until blended.
  • Grill chicken 40 to 45 min. or until done (165ºF), turning occasionally and brushing with barbecue sauce mixture for the last 15 min.

Shortcut

To shorten the cook time, remove breastbone from chicken, then cut chicken lengthwise in half before grilling as directed

Serve with hot baked potatoes and your favourite steamed fresh green vegetable.

How to Prevent Food From Sticking to the Barbecue

To prevent food from sticking to the barbecue, lightly brush the barbecue grate with vegetable oil before preheating the barbecue. Or, spray the cold barbecue grate with cooking spray.
