  • Cook rice as directed on package, adding the corn and 1 Tbsp. of the taco seasoning to the boiling water along with the rice. Stir in cilantro.
  • Heat oil in large nonstick skillet on medium-high heat. Add pork; cook and stir 2 to 3 min. or until evenly browned. Add remaining taco seasoning, the peppers, zucchini and onions; stir in water. Cook 5 min. or until vegetables are crisp-tender, stirring occasionally.
  • Serve spooned over the rice mixture.

Cover and refrigerate any leftovers. Spoon onto warmed flour tortillas, then roll up.
