Prepare using your favourite variety of red cooking apples, such as Honeycrisp. Using a red apple provides a nice contrast of colour with the cheesecakes. When we tested this recipe using Granny Smith apples, we found the appearance of the cooked green apples was less attractive than that of the cooked red apples.
With their built-in portion control, these delicious mini cheesecakes make great treats.
