  • Heat oven to 350°F.
  • Melt 2 Tbsp. butter in large skillet on medium heat. Add apples and 1/2 cup sugar; stir. Cook on medium-low heat 15 min. or until sugar is completely dissolved and golden brown, stirring occasionally. Add milk and cinnamon; stir. Cook 2 min., stirring occasionally. Remove from heat.
  • Microwave remaining butter in medium microwaveable bowl on HIGH 30 sec. or until melted. Add graham crumbs and 2 Tbsp. of the remaining sugar; mix well. Press onto bottoms of 8 paper-lined muffin cups, adding about 1 Tbsp. crumb mixture to each cup.
  • Beat cream cheese, 1/4 cup sour cream and remaining sugar in medium bowl with mixer until blended. Add egg; beat on low speed just until blended. Stir in half the apple mixture. Spoon over crusts.
  • Bake 20 to 22 min. or until centres are almost set. Cool completely.
  • Transfer cheesecakes to plate; top with remaining sour cream and apple mixture.
  • Refrigerate 4 hours.

Substitute

Prepare using your favourite variety of red cooking apples, such as Honeycrisp. Using a red apple provides a nice contrast of colour with the cheesecakes. When we tested this recipe using Granny Smith apples, we found the appearance of the cooked green apples was less attractive than that of the cooked red apples.
