  • HEAT oven to 400°F.
  • BEAT eggs and sugar with electric mixer on medium speed until well blended. Stir in Miracle Whip, pumpkin and pecans; mix well.
  • MIX flour, baking soda, salt and cinnamon. Stir flour mixture into pumpkin mixture. Beat 2 min. on medium. Spoon batter into greased or paper-lined muffin pans, filling half full.
  • BAKE 15 to 20 min. or until toothpick inserted in centre comes out clean. Cool 5 min.; remove from pans.


Sprinkle muffins with additional chopped pecans before baking, if desired

    Super easy. I didn't put in the pecans, just made the pumpkin muffins. Next time, I think I will make it with raisins or chocolate chips, and I will add either more cinnamon or maybe some pumpkin pie spice for a little more kick!

    This was the best and easiest homemade pumpkin muffins I have ever made. They are fabulous... I also substituted raisins for the pecans when making for the younger grandkids.. Will be making these quite often... Have brought as a gift when visiting... Very Good...

    I made these muffins with the pumpkin that was leftover from our Thanksgiving baking. They were quick and easy to make and they had a nice flavour. I also found they were a reasonable size, compared to the gigantic muffins they sell in grocery stores and coffee shops. I used walnuts instead of pecans and Miracle Whip Light Dressing instead of regular because that's what I had on hand.
