Substitute 3 fresh beets (1/2 lb./225 g), peeled, cooked and sliced, for the sliced canned beets.
Cut off beet tops, leaving 1 inch of the stem on each beet. Wash beets thoroughly. Carefully add to large saucepan of boiling water; cover and simmer 30 to 40 min. or until tender. Cool slightly. Wearing disposable gloves, peel warm beets under cool running water.

I make this salad for my Christmas dinner some years. It is always a hit and is so colorful and not too heavy so it goes well with the turkey and stuffing etc. I also like the red and orange coloring for Christmas and the flavors are rather festive too. I'm making it again this year.
This is the best tasting salad I love the contrast in flavours - even my vegetable-shy husband loves it!
