We've captured the fresh mint bite of a mojito cocktail in a frozen cheesecake with a pretzel crust. No baking required with this frozen cheesecake - just mix, freeze and serve.

  • Mix pretzel crumbs and butter. Press onto bottom of plastic wrap-lined 9-inch round pan. Freeze until ready to use.
  • Beat cream cheese, sugar, zest, juice and mint with mixer until well blended. Whisk in 1-1/4 cups Cool Whip; spoon over crust.
  • Freeze 4 hours. Serve topped with remaining Cool Whip.

Strawberry Margarita Freeze

Omit mint. Mash 1-1/2 cups halved strawberries with fork. Add to cream cheese mixture with Cool Whip; whisk until blended. Continue as directed. Garnish with additional strawberries just before serving, if desired.

Pina Colada Freeze

Omit lime zest, juice and mint. Add 1 cup canned crushed pineapple and 1/4 cup toasted flaked coconut to cream cheese mixture with Cool Whip; whisk until blended. Garnish with additional coconut, if desired.

Special Extra

Add 1/2 tsp. rum extract to cream cheese mixture with the Cool Whip.

    The pretzel bottom was very crumbly: make either finer bottom or substitute something else. My mother and I were not fans of this dessert, however my father loved it. Its a a very eye catching dessert on a table though! lovely colour

    I made both the margarita and mojito variations, I wasn't a huge fan of how the pretzel crust went for the mojito freeze so I just used graham cracker crumbs for the margarita freeze and thought it worked out better, definitely needs more butter in the crust though, I found they both fell apart too easily.

    I held a employee BBQ at my house and the dessert was a hit. I would definitely try to crush the pretzels better or maybe even use a pecan crust. Cannot wait to try the other flavours
