  • Grease 8 (6-oz.) custard cups or ramekins. Place on baking sheet.
  • Microwave chocolate and butter in large microwavable bowl on MEDIUM 2 minutes or until butter is melted. Whisk until chocolate is completely melted. Mix in icing sugar and coffee mix. Add whole eggs and egg yolks; stir until well blended. Stir in flour. Divide batter among prepared custard cups.
  • Bake at 425°F for 12-15 minutes or until cakes are firm around edges but soft in the centres. Let stand 1 minute.
  • Run small knife around edges of cakes to loosen. Carefully invert cakes onto dessert dishes. Sprinkle lightly with additional icing sugar, if desired. Top with raspberries. Serve immediately.

Make Ahead

Prepare as directed and pour into custard cups, cover with plastic wrap. Refrigerate up to 1 day. Just before serving, discard plastic wrap, bake and unmold as directed.
