  • Spray both sides of tortillas with cooking spray; place in single layer on baking sheet. Bake 8 to 10 min. or until crisp and golden brown, turning after 5 min.
  • Meanwhile, combine vegetables, parsley and dressing.
  • Serve tortillas topped with vegetable mixture, eggs and cheese.

How to Fry the Eggs

Heat large skillet on medium heat; spray with cooking spray. Add eggs; cook 3 to 5 min. or until whites are set and yolks are cooked to desired doneness.

Prepare using whole wheat tortillas.
