  • Heat oven to 350ºF.
  • Place first four ingredients on baking sheet. Brush chicken with dressing. Bake 35 min. or until cooked through (165°F); adding almonds and dried fruit for last 5 min.
  • Meanwhile, heat oil in a saucepan over medium heat. Add onion; cook until softened, 3 to 5 min. Add broth and bring to a boil. Stir in couscous, remove from heat, cover and let stand for 5 min. Fluff and add garlic, spices, almonds and dried fruit from baking sheet. Serve chicken on top of couscous.


Replace apricots with your favourite dried fruit, such as golden raisins and dates.
