These appetizers are impressive looking and taste divine - the ultimate choice when you are really looking to impress. Easy to make using frozen puff pastry -just thaw, bake and top. Best, they can be made a day ahead. Fresh basil adds a special flavor touch.

  • Preheat oven to 425°F. Heat oil in skillet on medium heat. Add mushrooms; cook and stir 3 min. Increase heat to medium-high; cook 5 min., stirring occasionally.
  • Meanwhile, roll pastry sheet to 15x9-inch rectangle on lightly floured surface. Cut lengthwise into 3 equal parts. Slide onto baking sheet. Prick all over with fork, leaving 3/4-inch left lengthwise margin on each part unpricked. Brush egg on unpricked portion. Bake 5 min. until pastry begins to puff and surface feels dry. Set aside.
  • Add cream cheese product to mushroom mixture. Reduce heat to low; cook 3 min. Spoon mushroom mixture onto pastry, leaving puffed edge uncovered. Place shrimp evenly in centre of each pastry piece. Bake 10 min. until crust is puffed and golden brown. Sprinkle with Parmesan cheese. Bake an additional 2 min. until cheese melts. Remove from oven. Let cool briefly; sprinkle with basil.
  • Cut into 24 pieces with shrimp on each piece. Arrange on platter; serve warm.

Make Ahead

Canapés can be baked up a day ahead. Cover in plastic wrap and refrigerate. Reheat in preheated oven at 375 F for 10 min. Sprinkle with fresh basil and serve.

To Double

Prepare second pastry sheet by doubling ingredients. Otherwise, separate frozen pastry sheets and store leftover sheet in freezer.

Creative Leftovers

Serve as a side dish, by stirring in 2 Tbsp. lemon juice to moisten mushrooms and to deglaze the pan. Add herbs like thyme and sage, if desired.
