  • Prepare couscous according to package directions, omitting salt.
  • Heat dressing in large skillet on medium heat. Add onion and pepper, cook 3 to 5 min. or until onions are soft and translucent. Add spices and cook, stirring for 1 to min. Add butternut squash and mushrooms and stir to coat with spices.
  • Add tomatoes and broth; cover and simmer over medium heat, stirring occasionally for 15 min. or until squash is almost tender. Stir in chickpeas, cook covered 10 min. Stir in cilantro. Serve over couscous.

Special Extra

Add 1/4 cup chopped pitted dates.
