Rinse beans; place in large bowl. Add enough water to cover beans by 3 inches. Let stand overnight. Drain and rinse beans before using as directed.
If cassoulet becomes dry during the baking time, gradually stir in up to 1/2 cup water to moisten to desired consistency.
